Nestled in the rolling hills of Bordeaux, the new Le Dôme winery in Saint-Émilion has welcomed its first visitors. Designed and engineered by the practice, the low-lying building blends seamlessly with the UNESCO World Heritage Cultural Landscape of the region with a state-of-the-art facility for the internationally renowned wine, Le Dôme. The form of the building is rooted in a desire to create a structure that simultaneously looks both inwards and outwards, providing an efficient space for wine production, while engaging in dialogue with the surrounding landscape.

Macallan Distillery and Visitor Experience

Location: Craigellachie, Scotland
The new distillery will enable production of The Macallan to increase by a third if required. Internally, a series of production cells are arranged in a linear format with an open-plan layout revealing all stages of the production process at once. These cells are reflected above the building in the form of a gently undulating timber roof. Grass-covered peaks rise and fall from The Macallan estate grounds, signaling to approaching visitors the activities housed beneath. Set into the naturally sloping contours of the site, the design makes direct references to ancient Scottish earthworks.

Surrounded on three sides by a winding creek, and with the majestic Emei peak as a backdrop, the site for this project is an exemplification of the Chinese notion of the duality of natural elements which make up the world we live in. Shan-shui literally means ‘mountain-water.’ While shan represents strength and permanence, shui represents fluidity and transformation; they are two opposing yet complementary forces.

Hill Country Wine Cave

Location: Texas Hill Country, Texas
Located at the eastern edge of the Texas Hill Country, this private wine cave serves as a destination along a secluded bend of the Blanco River. Excavated into the north face of a solid limestone hillside, this shotcrete lined tube is protected on the east and west by tall oak and elm trees, allowing it to nearly disappear within the native landscape. The unassuming exterior entry court reveals a bit of mystery as it provides just a glimpse of what lies within. Heavy limestone boulders, collected from the excavation, and lush vegetation further camouflage the entry as you descend into the mouth of the cave.

Located on a hill, the building expands mainly horizontally following the contour lines of the landscape settling into a natural terrace close to an existing escarpment. With its simple geometric shapes, the building expresses an original reinterpretation of vernacular architecture that eliminates any superfluous decoration to give shape and expression to the identity of the wine produced and the care dedicated to the agricultural practices used to obtain it. The quality of the architectural detail alludes to the care of the wine production craftsmanship.
